Up to now, we have been loved by and worked with our local Fukuoka customers, but recently, we have also seen an increase in the number of customers from overseas. We have prepared this website to let our overseas customers know about our restaurant.
Online reservations are also available. Please visit us when you come to Fukuoka. We look forward to meeting you all.

First Floor: Counter and Fish Tank
The first floor is not a tatami room but a spacious counter and raised tatami-floored seating area. There is also a large fish tank in the center of the counter. Fresh sea bream and flatfish are swimming in the fish tank. The chef scoops the fresh fish out of the fish tank with a net and immediately cleans them. Please enjoy your meal as a true live performance with your eyes, ears, and tongue.

History of Chikae
Hakata Ryotei Chikae was founded in 1961 by the founder Kiyotaka Tahara as a chicken restaurant in Daimyo, Chuo-ward, Fukuoka City, in the renovated residence of Tokumatsu Nakajima, a coal mining magnate and politician in Fukuoka. At the time, refrigerators were not widely available yet in homes, and the restaurant gained popularity by serving chicken dishes that were not commonly eaten at home. Later, however, with the spread of refrigerators, cooking meat at home gradually became more common. The founder, Kiyotaka Tahara, therefore decided that the next step was to make live fish dishes, which would not be common in the home in the future.
In 1963, the restaurant was renovated and reopened as a ryotei with a fish tank in the center and a counter where customers could be served from inside. At the same time, the restaurant opened for lunch, which few other ryotei did, thereby lowering the threshold for a ryotei and creating the foundation for a familiar ryotei. Since 1984, we have been producing and selling spicy cod roe with the unique seasoning of a ryotei, and we have received a favorable reception as we got inquiries from all over Japan. Today, we sell a variety of products using spicy cod roe, soup stock that reproduces the taste of ryotei, and meat buns made with Wagyu beef.
In 2021, we celebrated the 60th anniversary of our founding. We will continue to refine our taste, ingredients, and hospitality as a ryotei loved by customers in Japan and around the world.

Cuisine at Chikae
The founder, Kiyotaka Tahara, has always conveyed to his chefs the significance of contributing to the world by promoting Hakata's food culture through Chikae’s cuisine. The chefs' eyes check the freshness and quality of the ingredients, and they serve dishes made with truly good ingredients deliciously. This commitment begins with the preparation of ingredients, and the chefs go to the market every morning in the dark to directly select live fish from all over Kyushu and release them into the fish tank.
Using only the freshest and most carefully selected ingredients, each dish is carefully prepared with craftsmanship and sensitivity. The dishes are not only delicious but also visually pleasing, and the dishes are arranged in a way that expresses the seasonality of the season. Please enjoy a special moment where you can experience Japanese tradition and culture through the food.
